    Sunny quinoa salad | BioToday

    This sunny salad is a real favorite! A salad is always in good taste. It retains its healthy image and at the same time they are made more and more delicious, by the addition of pomegranate seeds, for example. Because this sunny quinoa salad is easy to prepare, you might as well eat it for lunch. The ingredients of this colorful quinoa salad complement each other perfectly. The eye wants something too and not to forget this lunch gives you a real energy boost!

    Ingredients 

    • 50 gr chickpeas (tin)
    • 1 tbsp BioToday Sunflower Seed Butter
    • 2 tbsp olive oil
    • 100 gr Quinoa
    • 1 Mango
    • Handful of fresh mint
    • 1 tbsp lemon juice
    • 2 tbsp Pomegranate seeds
    • Salt and Pepper

    Preparation 

    1. Preheat the oven to 200 degrees.
    2. Drain the chickpeas and rinse them well. Put them in a bowl and pour 1 tbsp olive oil over them. Season with salt and pepper.
    3. Spread them out on a baking sheet with baking paper and bake in the oven for 10-15 minutes.
    4. Meanwhile, prepare the quinoa as directed on the package and make the sauce by mixing the sunflower seed butter with the lemon juice, 1 tbsp olive oil, pepper and salt.
    5. When the quinoa is ready, place it in a bowl and mix in the sauce, followed by the roasted chickpeas, diced mango, fresh mint and pomegranate seeds.
