Smaakt | Speltnoedels met avocadopesto
Pasta pesto with a twist! This creamy avocado pesto pasta is ready in no time at all and is packed with good fats and healthy carbohydrates that release energy slowly. That way you can tackle it all afternoon.
Ingredients for 2 servings:
- 150 grams spelled noodles
- 1 avocado, peeled and pitted
- 1 clove of garlic
- 2 handfuls of fresh basil
- 30 grams cashew nuts
- 30 grams of pine nuts
- ⅓ teaspoon sea salt
- juice of ½ lemon
- 60 ml olive oil
- black pepper to taste
To serve: fresh basil and pine nuts.
Preparation method Spelled noodles with avocado pesto:
- Cook the spelled noodles in lightly salted water according to package directions.
- Place the avocado, garlic, basil, cashew nuts, pine nuts, salt, lemon juice, olive oil and black pepper in a blender (or hand blender) and grind into a creamy pesto.
- Drain the noodles.
- Mix the avocado pesto into the noodles and divide between two plates or bowls.
- Garnish with extra basil and pine nuts and serve.
